Back in 1785, while the French were slowly turning their bottles, Swedish botanists found a way to make a sparkling wine from pure birch sap.

In the deep woods of northern Sweden, we have found the perfect conditions to produce SAV, an organically harvested sparkling wine made from birch sap. Every year, when winter loosens its grip and the ground thaws, the nutrient rich birch sap rises in the trees to welcome another season of light.

The sap is carefully harvested and this marks the start of SAV season. This natural occurring phenomenon has proven to be an excellent raw material to make an interesting and complex sparkling wine. To keep it interesting, we strive to continually evolve and make every vintage our best yet.
